It's not something you are missing with the dynamic setup of your DNS zones
so much as it is two new things that you'll need to do.
1) Configure aging/scavenging on the properties of you AD/DNS zone via the
DNS management console (you'll have to enable this on the properties of each
DNS server object itself as well).
2) On the DHCP server, ensure "Discard A and PTR records when lease is
deleted" is enabled under the DHCP server properties > DNS tab.
