I would like to take my main servers and connect their two gigabit ports to
my Cisco 2970 switch. I want both ports to act as one using Trunking much the
same way I connect my 2950 switch to the 2970 switch. This would give me a 2
gigabit to the network. Can this be done? If so how?

You almost certainly need a Teaming NIC driver to make
any use of two NICs on the same subnet.

You will need teaming driver that supports the NICS that you are teaming
together AND supports the Cisco Trunking protocol.
