I'm using the Issue list that comes with sharepoint. I don't want to use the
Assigned To field to choose who to send the e-mail to so I have turned off
the Send Email to person assigned to the issue, but I cannot delete that
field from the column list and I don't want it showing when the user creates
a new issue. Can this be done?
Then, I have 1 e-mail address that I want all emails to go to when an item
is posted/updated on the site (I don't want to have the Client to choose a
user from the list when he/she logs a request). How can I accomplish this?

You should be able to Edit the aspx-form in Frontpage and delete the
controls you don't want.

The easy way to do this is probably by setting an Alert for the 1 email
address that needs to get the 'alerts'.
