I am having multiple installations of commerce sites on the same web and
database servers.
I have used the retail solution site as a basis for my development.

The problem is that the servers are located in timezone +2 but one of the
store's sould be serving timezone +10 and other one GMT. (UK)

For each site I set up a different bizdesk and they should be seeing order
details and reports in there own time zone. Now they are all seeing the
server's timezone.

I am not sure I understand you problem completely, but here is what I
gathered:

The servers (both database and webserver) are set up at GMT+2 right? If
this is the case, then they will display all information in GMT+2 timezone.
If you want to show a different timezone, then you will need to reconfigure
the server time zone (in windows) to the new time zone (say GMT+10).
However, you will not be able to use the same server to display two
different timezones for two different sites (because Commerce Server uses
the servers - Windows- timezone setting, which there is only one of).
