I'm trying to log my calls & e-mails both by date of original communication
and subject; and to also log the results

Live Communications Server will show, in the logs, the communication
information. It won't, however, log the actual voice conversation.

Regarding the e-mails, I would suggest that you turn on, and use, Outlook
Journaling.
