Due to high availability and capacity reasons, we chose medium farm
even though the user count is 1500. We need 2 portals for 2 divisions
(each division user count is 1500) and we decided to use 2 medium
server farms as these portals have SSL requirement (as IP based v s's
are not supported prior to sp2).
Now, with SP2, IP based virtual servers are supported and hence
multiple SSL portal sites in a farm.
This would be a non shared server farm and I know load on index crawls,
propogation. We did load testing on 1st portal on this medium farm, it
has 110 ops/sec for regular operations. But, it was only 3-4 ops/sec
for search.
I could increase hard disk space, memory to suffice for 2 servers.
But, Before I try this, I was wondering if anyone can foresee any
issues with such configuration. I am trying to avoid create, maintain,
purchase license for another 3 servers.

The total user count for both these portals would be 3000. And this is
just portal which do not have Team Sites. Team Sites are on a seperate
WSS farm. So, I believe if server specs are raised and it should do
good for both farms.

Any input is appreciated!

Not knowing much about your environment I would say it sounds fine to me.
Maybe just make sure that you schedule your indexing for off hours as much
as possible.

You can do lots with performance tuning if you need to. There are IIS
settings, you can rearrange the logs to separate physical disks, you can
etc... Long story short I am saying you can do some tuning if you get the 2
portals on the one farm and you aren't happy.
