I am trying to use the SPFieldCollection class to figure out if a field
already exists in a list, if not I am going to add the field dyanmically.

The Add part is easy enough, though I cannot seem to get whether or not a
certain field name already exists?

Any help or ideas would be great!

Have you tried using GetField method of the SPFieldCollection class?
