I am new to WSS, but have a req to add asap.
I attempted to add WSS today, promtly shutting down other web sites that
were listed in default in IIS.

Is there any way to change the initial installation or prevent WSS from
controlling other sites upon installation? Any other shortcut to hints about
WSS also welcome.

Install WSS on a new virtual server. However, be sure to filter on host
headers, and not on IP address.
