Since DFS is "Last saved wins" in what situations can it be used as a File
Server. If you have three or four files open at the same time of the same
doc, you could have many versions being over written. How can you set it up
so that this doesn't happen.

I believe you are talking about FRS not DFS.

You can not use this technology to control document access and protection
like this.
You need to explore a document mamagement product. Check the document out,
and check it back in.
I'm sure there are a myriad of solutions on the market. I've never explored
them though.

We use MKS as our file versioning product. It seems to me that DFS with it's
File replication Service can only be used in a "Read Only" state. If you
can't guaranty that changes that are made will be saved I see no other use
for it.
