Work with your SAN vendor, they may have a mirroring software package. You
will have to take an outage to mirror the SAN drives, then you just change
World Wide Name (WWN) for the SAN and boot your Exchange nodes.
If they vendor does not support or have software for a mirror, then start
all over and migrate. A migration will keep the users and systems online for
most of the migration.
