Instead of pulling the local workstation contact information (which may
contain personal entries, and not be complete for a company) can LCS be
configured to check in with AD the way Exchange does when you are searching
for someone in the Global Address List?

LCS 2005 with SP1 definitely can allow for this through the Address Book
service.
