Thanks everyone for your help. Jim was right suggesting to check that
the smtp server was listening on all unassigned, of course it wasn't.
Now I can telnet port 25 and connect. Hopefully this will sort the
problem of recieving emails. Is there a way of testing that exchange
is working WITHOUT changing the MX records? I can't change the records
during working hours unfortuantely so I want some confidence that it
is working correctly before I plan the install.

Thanks again everyone.

You are not the one that is changing MX records, your ISP is the responsible
for that.
