We are testing if Sharepoint is a good solution for our company to use as an
EMDS and I've got a question about showing metadata and attributes inside a
word document.

Is it possible to add attributes like author, reviewer, creation date,
review date, status and others automatically to fields in word documents from
the document workspace in sharepoint?

If so then how can it be done?

Look at this which covers the standard properties that all already in Word

Other properties you can define as fields in WSS while in the document
library of that document workspace.
