The value you retrieve from Profile["address_list"] will be a string array.
you should be able to use:

object[] addresses = (object[])Profile["address_list"]

Each member of the array is an Address profile primary key value. Also,
you could ProfileProperty.GetProfiles() to get the embedded address easily:

ProfileCollection addresses =
Profile["address_list"].GetProfiles("Address");

Follow up question Dave. Can you "filter" the list of addresses
(ProfileCollection) returned using the "address_type" so that only Ship To
Addresses are returned?

That kind of logic is not built into the profile system. You could always
write your own wrapper around the Profile class to accomplish this, though.
