With a 2 node cluster you can connect the private network NIC's on the
cluster nodes with a cross over cable. How do you connect the private
network adapters in a cluster with more than 2 nodes? With a 3 node cluster
should each notes have more than one private adapter?

No, 1 private Adapter for each Node is enough.
;-)
Take a Switch or a Hub for the private Network.

recommendation, which is to use a hub.

No matter what you do, make sure that there is no possible way for the
heatbeat network to route to another network.
