We have two Windows 2003 domain controllers. One is a SBS2003 setup.

We would like to replicate as much of our production data as possible so our
users can continue to work if one of the servers is down for a few days.
This includes the Users Shared Folders.

Can these files exist in a dfs share with the logon process mapping a drive
to \\domain\dfsroot\userssharedfolders\%username%?

Yes you can do this. You might want to set one of links are preferred
though, and only allow referrals to the other in the event of a failure.
NTFRS isn't up to this task with volatile data - R2 DFSR will probably be
though!
