I have made one shared folder on my SBS server to be available offline to
one Windows XP client.

Is it possible to make the file on the server remain unchanged whenever I do
the synchronization?

No - synchronization is by definition two-way.

If you want to make this folder available offline to users and not permit
them to make changes there, don't use offline files - try a third party app
called SecondCopy 2000 (www.centered.com) - I like it a lot better anyway.
You can make a one way copy/update job. Also, you can change the permissions
on the folder on the server so the user can't accidentally make changes to
the source either.
