Is there a way that I can list all of the sites set up on a virtual server?
I have taken over responsibility for this sharepoint server and know there
are a bunch of sites set up, but I can't seem to list what they are.

I think there are a bunch set up for testing that I want to get rid of, but
I don't see an option to list them to show which one to delete. I see that
if I know the name (path) of the site, I can remove it, but if I don't know
it, how do I edit or delete it?

Doesn't Site Settings / Manage sites and workspaces work for Virtual Servers
?

(Don't have one to test on just a normal default site)

That doesn't behave the same for virtual servers. If I know a site url I can
get into it and see the sites and workspaces under it, but if I don't know
the URL (https://sharepointserver/sites/whatever) It's this "whatever" that
I am trying to find a list of all sites set up on the server.

the following command may produce some useful info

stsadm.exe -o enumsubwebs -url https://sharepointserver/sites/whatever
