How do you add or remove from the specific Site "subareas" (i am not sure
they are subareas but this is how you browse by them)?

Out of the box the Site page allows you to browse by:

IT | Research & Development | Sales | Finance

Then by Region:

Local | National | International

I cannot find where to edit these... Any help is appreciated.

Sites -> Customize Lists -> Click the Column (such as Division) and it lists
the Divisions in a text box.

This is kind of awkward as you would think that this would be a list
elsewhere...

Manage Content -> then u will find a list called "Sites" click it ->u can
find the page to change the list items.

or u input url in the addrsss bar of IE
http://urintranetaname/SiteDirectory/Lists/Sites/AllItems.aspx

Manage Portal Site. From there you can expand the treeview to find the area
you want to delete and use the drop down to delete it.
