Are you running SBS 2000???
are you running all the latest service packs?
You certainly will not want to get rid of those OS Upgrade folders (I assume
you are talking about the hot fix folders?)
Is the Exchange Store moved to another partition?
Are the user folders moved??

I'm with Chris on this, don't delete the stuff, move it to a larger
partition ( Same or separate HDD )

For the Company/User folders, you just need to un-share them, move and
re-share (making sure you record and recreate permissions exactly).
( Xcopy can help here )
How to Move Small Business Server 2000 Company and Users Shared Folders
http://support.microsoft.com/default.aspx?scid=kb;en-us;329640

To move the Exchange databases, use Exchange System Manager.

821915 How to Move Exchange Databases and Logs in Exchange Server 2003
http://support.microsoft.com/?id=821915

For SQL Server, from Enterprise Manager, to move the User Databases, you
use Detach Database, move the MDB and LDB files and then use Attach
Database.

You can also change the ISA cache location from ISA Management - under
Cache Configuration.

Move the page file and spool file to another disk.

With the Patch $Uninstall....... files in the system folder I move them
to another partition/folder to be moved back if and when needed.
